Ingredients

Dry

  • 1 cup all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon

  • 1 ½ cup rolled oats

Wet

  • ½ cup melted butter OR coconut oil

  • ¾ cup brown sugar

  • 1 whole egg

  • 1 egg yolk

  • 2 teaspoons vanilla

Optional
  • ¾ cup raisins, chocolate chips, nuts, or anything you want!

What to Do
  1. Preheat oven to 350°

  2. Prepare two baking sheets with parchment paper. If you only have one, you will bake your cookies in two batches.

  3. Mix together all dry ingredients in a medium sized bowl: flour, baking powder, baking soda, salt, cinnamon, oats.

  4. Whisk together all wet ingredients in a large bowl: butter OR coconut oil, brown sugar, whole egg, egg yolk, vanilla.

  5. Pour dry ingredients into wet ingredients and mix together well.

  6. Add optional ingredients to the batter.

  7. Using a tablespoon, scoop cookie dough onto prepared cookie sheet(s).

  8. Bake for 9-11 minutes.

  9. Remove from oven and let cool. (Place second baking tray in the oven for 7-8 minutes. If you’re only using one tray, remove cookies from baking sheet to let cool and repeat steps 7-8.)

  10. Enjoy!!
